Hi Reader, Thanks to your feedback on the last recipe poll. The answers were SO CLOSE! So, because of this near tie, I will be testing both the pesto pasta recipe and the hidden veggie mac and cheese. Stay tuned for both in the next few weeks! This week's new recipe family-friendly and only requires 1 pot. If you have cooked chicken already (or even rotisserie chicken), you can skip the grunt of the cooking here and your recipe is ready in 15 minutes! I happen to think orzo pasta is so...

Hi Reader, Why yes - I did put "Healthy breakfast cookies" in this newsletter's title... Because I'm currently obsessed with them. They make a great snack, but when paired with hard boiled eggs or greek yogurt, I honestly love having them for breakfast because it starts my day off with a serving of veggies! It's really hard for me to eat veggies at breakfast, unless I'm ordering an omelet for brunch. I naturally gravitate towards a sweeter oatmeal but these sweetpotato oatmeal cookies are the...

Just use your favorite waffle maker and see how much you love them. Get the...

Hi Reader, Happy Friday! As a bonus email this week, I wanted to send along some options to add to your table for Mother's Day this Sunday. We will likely go to church, come back home for lunch, then head out to a local brewery with some friends for music, food, kids playground and more. It should be a fun time. Hi Reader, I was 37 years old when I learned about sheet pan pancakes, and how magical they are. No joke - they helped get me through solo parenting, especially the sprinkled mix! They were an easy breakfast option (that took 15 minutes to make ahead of time, mostly just in the oven while I could do other stuff, like make lunches). And speaking of lunches, I used them for lunch, too! Not the same day I served them for breakfast - don't worry. But they are an easy addition to kids lunch boxes....

Hi Reader, I'm hoping this email will help simplify meal planning for you. It doesn't have to be all or nothing - like I talk about in my "How to meal prep" ebook (which had several purchoses/5 star reviews over the weekend!) Here is a picture of my notes app that I use to plan our meals. Most of the planning I do is "mental" planning, meaning I try to allocate certain meals we'll make this week based on what we have. Vs. physical meal planning, where you actually make the meals. That works...
